做法:春笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段(duàn )翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽(chōu )、蚝油(yóu )翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬(áo )干(gàn )的时候加入(rù )盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅盖(gài )焖。
