做(zuò )法(fǎ ):春笋切成片后加少许(xǔ )盐(yán )捞出后(hòu )用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半(bàn )掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水(shuǐ )快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
