做法:春(chūn )笋切成片后加少许盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒入(rù )2勺油(yóu ),放入生(shēng )姜、春笋、牛(niú )肉片、葱(cōng )段翻(fān )炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖(gài )大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
