做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入(rù )少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮开后(hòu )转中火。煮到(dào )水快(kuài )熬干的时(shí )候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖(gài )上锅盖焖。
