做法:春笋(sǔn )切成(chéng )片(piàn )后加少许盐(yán )捞(lāo )出后用清水浸(jìn )泡,生姜切片(piàn ),葱(cōng )切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干(gàn )的时(shí )候加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅盖(gài )焖。
