做法(fǎ ):春(chūn )笋切成片后加少(shǎo )许盐捞出后用(yòng )清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
