做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水(shuǐ )半掩住(zhù )春笋,盖(gài )上锅(guō )盖大火煮开后(hòu )转中火(huǒ )。煮到水快熬干(gàn )的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
