做法:春(chūn )笋切成片后加(jiā )少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火(huǒ )煮(zhǔ )开后转中火。煮到水快(kuài )熬干(gàn )的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时(shí )盖(gài )上锅盖(gài )焖。
