做法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧(shāo )热(rè ),倒入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋(sǔn ),盖上锅(guō )盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的时候加入(rù )盐(yán ),翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
